Tortang Talong


Eggplant is a good source of fiber, potassium, manganese, copper and antioxidants.And it is one of the quickest meal to cool to go well with rice! You can never go wrong with Eggplant Torta but here is a recipe I found that makes the usual Tortang Talong taste great with a little bit of a chili kick!

Serves: 4-6 pax


INGREDIENTS:
2 tbsp cooking oil
2 tbsp chopped garlic
1 medium onion, chopped
¼ kg ground pork
1 satchet MAGGI MAGIC SARAP 8g
salt and pepper to taste
8 eggplants, grilled, skinned and flattened
3 eggs, beaten
flour
cooking oil for frying
chili sauce

PROCEDURE
Heat cooking oil. Sauté garlic and onion until limp. Add in ground pork and season with MAGGI MAGIC SARAP, salt and pepper. Cook for 10 minutes or until pork turns white in color. Transfer on a plate to let the mixture cool down.
When mixture is cold enough to handle, spoon 2-3tbsp of the meat mixture and put on the center of flattened eggplant. Cover meat-filled eggplant with beaten egg and a dash of fl our.
Heat cooking oil. Fry prepared eggplant for 5 minutes or until golden brown.
Transfer on a paper lined plate to drain excess oil. Serve with chili sauce on the side.
